1 Bunch fresh Asparagus
1 Whipped Cream
1 Minced Onion
1 Carrot
1 Celery stem
1 Potato
1 Broth Cube
Chopped Parsley
Marjoram
Tarragon
Salt
Pepper
Toasted Bread slices
Butter
Grated Parmesan Cheese
In a large skillet pour 2 tbsp of olive oil add the minced onion and let it brown
Add the asparagus (only the green part), cover with water then add carrot, celery, potato cut into bits, and broth.
Cook for about 1 hour
Remove the vegetables, put them in the food processor and mix.
Put the vegetable cream on heat and bring to a boil adding salt, pepper, parsley, marjoram, tarragon all minced and finally add whipped cream.
Serve with toasted bread slices and sprinkle with grated Parmesan cheese.
