Ginger Cookies (Biscotti allo Zenzero)


Ingredients
250 gr. Melted Butter cooked Bain-Marie
250 gr. Sugar
150 gr. Honey
600 gr. 00 Flour
250 gr. Chopped Almonds without peel
1 Tbs Cinnamon
2 Tbs Ginger
2 Tbs Dust of cloves
1 Tbs Bicarbonate



Beat together butter and sugar until get a creamy mix, adding sugar little by little.
Add other ingredients and mix well.
Shape with hands a cylinder of 4-5 centimeters diameter, wrap in plastic wrap and put into the fridge for the whole night.
Cut to thin slices (max 3 millimetres) with a well sharp knife.
Put in oven to 200 degrees C on a buttered plate
Cook for 8/10 minutes (they don't have to become too much dark).
