
Ingredients for 6 persons
300 gr (10.58 oz) Mortadella slices
100 gr (3.4 fl oz) Ricotta Cheese
1 Tablespoon grated Parmesan
1 Tablespoon liquid Cream
1 Tablespoon chopped Pistachios
3 Slices of Bread cut in half

Mortadella Mousse (Mousse di mortadella)
Place the mortadella on a chopping board, chop it finely and transfer it to a bowl. Transfer the mortadella to the food processor, add ricotta and grated parmesan, cover up and process at medium speed for 3 minutes. After 3 minutes, use a tablespoon to push the mixture towards the centre then mix until homogeneous. When the mixture is homogeneous, with the motor running, slowly pour the cream and continue to mix.
Heat a pan over medium heat and once hot, place the bread slices into the pan and toast on both sides. Make the quenelles with the mousse by using 2 tablespoons and transfer to a serving dish, garnish with chopped pistachios, add the bread slices and serve
