
INGREDIENTS: (4 servings)
400 Gr. Farfalle (Bow ties pasta)
5 Courgettes
2 Garlic cloves
Parmesan cheese
Extra-Virgin Olive Oil
Mint leaves
Salt
Wash the courgettes, roughly cut and make them brown in a frying pan for 3 minutes with olive oil and crushed garlic then add mint and salt.
Cook pasta.
Dissolve ricotta cheese with some tablespoons of cooking water
Drain and season the pasta with ricotta cheese and courgettes sauce.
Sprinkle with grated parmesan cheese.
