Pear Puree with Roman Pecorino Cheese  (Purea di pere con pecorino romano)


INGREDIENTS: (4 servings)
1 Kilo pears
200 Gr. Pecorino cheese
Mint leaves



Peel the pears, cut them in pieces and reduce them to a puree with the vegetable mill.
Discard the juice and put the puree in a pan.
Cook for about 10 minutes until thickened.
Arrange on a plate, cover with fresh pear slices, mint leaves and Pecorino cheese.
