
Ingredients for 4 persons
320 gr (11.28 oz) Penne Pasta
150 gr (5.29 oz) Tomato Sauce
100 gr (3.52 oz) Fresh Cream
50 gr (1.76 oz) Butter
50 gr (1.76 oz) Pancetta
1 Small Glass Good Quality Vodka
Extra Virgin Olive Oil
Black Pepper
Salt

Penne with Vodka Sauce - Penne alla Vodka
Bring a large pan of salted water to a boil, once it begins to boil plunge in the pasta and cook, according to instructions, until "al dente" (cooked firmly).
Heat a frying pan over medium heat, add pancetta, pour in a little extra virgin olive oil and a knob of butter. When the pancetta becomes to brown, add a pinch of black pepper, sauté and cook for a couple of minutes.
Remove the pan from heat, pour in the vodka, flambé (be very careful to the flame) and add another knob of butter. Once the vodka is almost completely evaporated, add the tomato sauce, a pinch of salt the cream and let the sauce simmer while the pasta cooks
Once ready, drain the pasta, transfer to the pan, sauté and finally pour in a little more vodka. Transfer the pasta to a serving dish, garnish with parsley, black pepper a little olive oil and serve
