500 gr (17.63 oz) Cornmeal
4 Fresh Pork Sausages
700 gr (24.69 oz) Tomato Purée
Extra Virgin Olive Oil

Polenta and Sausage - Polenta con salsicce
Heat a pot over medium heat, pour in abundant extra virgin olive oil, add tomato purée, sausages and a pinch of salt. When the sauce begins to simmer, cover up with a lid and let it cook for about 1 hour. Check from time to time that the sauce doesn't stick to the pan and toss with a wooden spoon
While the sauce is cooking, after about 20 minutes, pour 1 litre of water into a pot and when it begins to boil, add 2 or 3 pinches of salt and with a wire whip, add the polenta very slowly, stirring constantly
Once all the lumps have dissolved, use a wooden spoon to stir polenta
The classic Italian polenta cooks in about 30/40 minutes, if you use instant or quick cook polenta, cook according to the package instructions
When polenta and tomato-sausage sauce are ready, pour polenta on a wooden cutting board, spread the sauce over the top and serve
