Potato Pizza (Pizza con le patate)


INGREDIENTS:
10 oz. pizza dough,
3 potatoes, peeled and sliced thinly,
1 onion, sliced thinly,
1 tbsp. chopped scallions,
4 strips of bacon, chopped,
1 roasted red pepper, diced,
1/2 tsp. chopped rosemary,
1/2 teaspoon paprika,
1 cup grated mozzarella,
1/4 cup grated Parmesan,
1 oz. smoked Gouda cheese,
salt and pepper to taste



 

Roll the pizza dough with a rolling pin to a circle with 12 inch diameter.

Put the pizza dough on a pizza pan and bake it in the oven.

Grease a different pizza pan with little olive oil and arrange the thinly sliced potatoes, red pepper, onion, scallions, bacon, rosemary and paprika, and bake until the potatoes are cooked through and soft.

With a spatula take the baked potato mixture and put it on top of the cooked pizza crust.

Optional - you can top the potato pizza with some thinly sliced tomatoes, as well.

Sprinkle with all the cheeses on top and bake the Potato Pizza until the cheese is melted and bubbly.
