Red Chicory Salad with Oranges (Insalata di radicchio con arance)


INGREDIENTS: (6/8 servings)
3 Oranges
1 large Red Chicory, halved, diced (about 5 cups loosely packed)
1 large Frisée salad, halved, diced (about 6 cups loosely packed)
½ Medium Red Onion, thinly sliced (about 2 cups)
2 Cups (loosely packed) Mâche
½ Cup Olives, pitted, halved
4 Oz. Feta Cheese, crumbled
2 Tbsp Red Wine Vinegar
1/3 Cup Extra-Virgin Olive Oil



Cut 1 orange into wedges

Squeeze the oranges
Combine 1/4 cup orange juice and vinegar in a small bowl (reserve remaining juice).
Whisk in olive oil. Season with salt and pepper.
Cut mâche, frisée, and red chicory in a large bowl.

Add orange wedges, sliced red onion, and pitted olives.
Drizzle orange pouring over salad and mix well.
Sprinkle with crumbled feta cheese and serve.
