
Ingredients for 4 persons
320 gr (11.28 oz) Spaghetti
200 gr (7.05 oz) Salted Anchovies (previously rinsed under cold water)
2 Cloves of Garlic
Breadcrumbs
Parsley, Roughly Chopped
Extra Virgin Olive Oil
A Pinch of Salt

Spaghetti with Anchovies and Breadcrumbs - Spaghetti con acciughe e pangrattato
First of all, plunge the pasta into a pot of boiling salted water
Pour the olive oil (4 tbsp) into the frying pan, add the garlic cloves and let them brown, then add the anchovies and cook them over low heat until dissolved. Once the anchovies are dissolved, add a handful of parsley, a handful of breadcrumbs, let it flavour for a couple of minutes then turn off the heat
Wait the end of pasta cooking time and turn on the heat under the frying pan, add 1 ladle of pasta cooking water, remove the garlic, drain spaghetti and transfer them to the pan
Let the pasta absorbs the flavour of the sauce and add some breadcrumbs, a pinch of salt, drizzle with olive oil and add another ladle of pasta coking water, then sautè. If the pasta is too dry add more water
Turn the heat off and transfer the pasta to a serving dish, sprinkle with breadcrumbs, drizzle with olive oil and serve
