Spelt soup (Minestra di farro)

INGREDIENTS: (4 servings)
200 Gr. Spelt
3/4 Red tomatoes
2 Slices bacon or lard
1 Small onion
1 Celery stalk
1 Carrot
2 Tbsp Grated Pecorino cheese

In a large saucepan, heat the olive oil and sautè the finely chopped vegetables together with the bacon
Cook until the vegetables begin to color and the bacon gets crispy.
Add the tomatoes, salt and pepper and cook the sauce for about 10 minutes.
Add 1 lt of boiling water, season to taste with salt and pour in gently the spelt.
Allow to simmer for about 30 minutes.
Serve warm, with a drizzle of quality olive oil on top and a sprinkle of Pecorino cheese.
