Strozzapreti with baby squid and porcini mushrooms (Strozzapreti con clamaretti e funghi porcini)


INGREDIENTS: (4 servings)
320 Gr. Strozzapreti* pasta
400 Gr. Baby squid
500 Gr. Sliced porcini mushrooms
1 Cup clam broth
2 Cloves garlic
Hot pepper
Parsley
½ Cup white wine
Extra virgin oil



Heat a skillet with 1 cup oil and saute' the garlic and the hot pepper.
Remove the garlic from the pan and add the baby squid and the sliced mushrooms.
Allow to start roasting, pour in the wine and let evaporate.
Add the clam broth, some chopped parsley and cook for 5/6 minutes. Season with salt.
Cook the pasta al dente, fold in the pan, toss to combine the ingredients and thicken the sauce.
Sprinkle some more parsley, drizzle with olive oil and serve immediately.

 

*Strozzapreti is a typical type of twisted tube pasta, made with flour, water and salt, translates literally as ‘priest stranglers' or 'choke the priest'
