
Ingredients for tuna mousse
200 gr (7.05 oz) Tuna flakes in Oil
100 gr (3.52 oz) Ricotta Cheese
50 gr (1.76 oz) Butter at room temperature
10 gr (0.35 oz) Capers in Vinegar

100 gr (3.52 oz) Smoked Salmon
100 gr (3.52 oz) Mascarpone Cheese
50 gr Grated Parmesan
20 ml (0.67 fl oz) Heavy Cream
Ingredients for ham mousse
100 gr (3.52 oz) Cooked Ham
100 gr (3.52 oz) Ricotta Cheese
100 gr (3.52 oz) Mascarpone Cheese
20 ml (0.67 fl oz) Heavy Cream

Tuna, Salmon and Ham Mousse - Mousse di tonno, salmone e prosciutto
How to make tartines
Place your favourite cookie cutter over the bread then press and cut to create the desired shape
Place a large pan over medium-high heat, once hot add the bread and let it toast on both sides for at least minutes 2-3 minutes
Tuna mousse
Place tuna, ricotta cheese, butter and capers in your food processor and blend at medium speed for about 4-5 minutes to get a smooth and homogeneous mixture
Salmon mousse
Place the following ingredients in your food processor or blender: grated parmesan, smoked salmon, mascarpone cheese, heavy cream. Blend at medium-high speed for about 4-5 minutes until the mixture becomes homogeneous
Ham mousse
Place cooked ham, ricotta cheese, mascarpone cheese, heavy cream and salt in your food processor. Blend at medium-high speed for at least 3-4 minutes until you obtain a soft and homogenous mixture
Butter a square mould, place it on a serving dish and fill it with salmon mousse, use a tablespoon to press gently the mixture
Butter a round mould, place it on the same serving dish, fill it with tuna mousse and press it gently
Finally make quenelles with the mousse of ham using two tablespoons and place it on the same serving dish
Gently remove the moulds and place in the fridge for at least 1 hour. Garnish the dish with the bread tartines and serve
