
INGREDIENT: (4 servings)
Eggs: 6
Assorted Vegetables (swiss chard/beet greens, spinach, leeks, onion,red pepper, basil, sage)
Olive Oil
Pepper
Salt
Clean and wash all the vegetables and the herbs and then boil them (excluding the basil, sage and pepper).
Once they are cooked, drain and squeeze out as much excess water as possible so that they are quite dry.
Cut them up.
Put the frying pan on the heat with a little oil and when it's hot, put the vegetables in, add the basil and sage leaves, mix together and leave to take flavour over a moderate heat.
In a mixing bowl, beat the eggs, season with salt and pepper and mix them with the sautéed vegetables.
Put the frying pan on the heat again with a little oil, and when it is boiling hot, put the mixture in and cook it well on its underside; use a large plate to turn the omelette over, cook the other side.
It may be served either hot or cold
