1.2 Kilo (43.32 Oz) Boneless Pork Loin Roast
2 Carrots roughly chopped
2 Celery stalks roughly chopped
2 Cloves Garlic
1 Small Glass Dry White Wine
1 Rosemary Sprig
½ Onion
Extra Virgin Olive Oil

Place the pork loin and the rosemary into a baking dish, season with salt and black pepper, add the onion, the celery, the carrot, the garlic previously crushed, pour in the white wine and the olive oil
Place the baking dish in preheated oven to 200 C (400 F) and bake for about 40 minutes
Once the roasted pork is ready transfer it into a serving plate, pour the pan drippings over the meat and serve.
Tender and crispy roasted potatoes are a perfect accompaniment to this dish
