Congress of Italian cookery author. Identita' Golose will concentrate on primary products, going "Beyond the Market" with the object of surpassing, while continuing on the same route, the pillar of our last two congresses, namely the "Luxury of Simplicity" which is now a watchword in signature cuisine and confectionery not only in Italy. It will do so by heightening the "simplicity" of content and form that accompanies the world since the economic crisis opened the eyes to many, revealing a change of course that was in fact already under way.
The congress will go "Beyond the Market" because the greatest cuisine and the best confectionery should no longer limit themselves to order the best primary products, this should be given for granted, needless to say, but they must go directly to the source, to their production and look for the best. It is on this that they should intervene to shape this or that preparation. It's a matter of grasping the essence, the soul of a product, in a search for taste that is concrete and free of cunning. One should order having quality in mind, and not saving; cuisine should be intelligent, concrete and sincere, it should prefer direct taste and, with it, the shades that a skilled chef can add. This is why some of the lessons will be given by two lecturers at the same time, two or three ingredients interpreted according to their savory and sweet side, after contemporary cuisine has seen the borders between restaurants and confectioneries fall down. There will also be a focus on the best twenty year old chefs, the champions of the future, and days dedicated to Brazil and to pasta, to meat, to pizza and to confectionery.
